I always love a good and easy casserole. It’s one of the best things about life! I have my favourites, and this Tortilla Chip Enchilada is on my top list. Made with beef or chicken, enchilada sauce, spices, cheese, and crispy tortilla chips, this simply transported me to paradise! This enchilada is crazy easy to pull together, incredibly delicious, and an excellent dinner for an easy and quick meal that your entire family will love!

3 c. of shredded cheese
1 pound ground beef (or shredded chicken)
1 bag of tortilla chips
4 ounces can of diced green chillies (drained)
1 large can (28 ounces) of red enchilada sauce
1/2 c. of salsa
1 teaspoon ground cumin
How to make Tortilla Chip Enchiladas
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cook the beef until no longer pink. When done, drain the excess grease.
Step 3: To the ground beef, add the diced green chillies, salsa, and cumin. Stir well until the ingredients are incorporated.
Step 4: To a large mixing bowl, pour the bag of tortilla chips, then gently break the chips a bit.
Step 5: Over the chips, add the beef mixture, then pour in the whole can of enchilada sauce. Now, add a cup of cheese and mix gently until well combined.
Step 6: Using a nonstick spray, grease the baking dish.
Step 7: Into the prepared baking dish, pour the tortilla chip enchilada and sprinkle with 2 cups of shredded cheese, completely covering the top.
Step 8: Tent the enchilada with foil and place it in the preheated oven. Bake for about 50 minutes until done.
