Tomato and Bacon Pie

Prep Time: 25 mins | Cook Time: 35 mins | Total Time: 1 hr | Yield: 6 Servings

This pie is simply the best! The taste of the fresh tomatoes complements very well with the rest of the ingredients, especially the cheese and bacon. It is so difficult not to fall in love with this at first bite. A must-try recipe indeed. Enjoy!

Ingredients:

½ c cooked and crumbled bacon

½ c mayonnaise

¼ c basil, chopped

2-3 tomatoes, sliced

1 c shredded cheese, mozzarella or cheddar

freshly ground black pepper to taste

1 9-inch-deep dish frozen pie crust baked to package directions

½ c green onions, chopped

Directions:

Defrost the frozen pie crust if you are using it. Refer to the directions provided on the package of the pie crust on how to bake it. Remove from the oven and let it cool at room temperature for a few minutes.

Place the tomato slices at the bottom of the pie crust and arrange them in layers. Sprinkle salt and pepper on top to season.

Scatter the crumbled bacon, green onions, and basil on top of the tomato layer.

Add shredded cheese and mayonnaise into a mixing bowl. Stir everything until well blended.

Pour the mixture over the pie and spread it evenly

Place it in the oven preheated to 350 degrees F. Bake the pie for 30 to 35 minutes or until the top turns golden brown.

Remove from the oven and allow the pie to rest for a few minutes at room temperature.

Serve and enjoy!

Notes:

Make sure to cover the crust of the pie with foil if it gets too brown while baking it.

Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
