INGREDIENTS
4 boneless, skinless chicken breasts, pounded to even thinness
2 tbsp orange marmalade
3 tbsp unsalted butter or extra-virgin olive oil
1 tbsp Dijon mustard
3/4 c. toasted pecans, roughly chopped
1/2 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp onion powder
kosher salt and freshly ground pepper, to taste
1 1/2 c. heavy whipping cream
How to make Toasted Pecan Chicken Skillet
Step 1: Generously season the chicken with salt and pepper. Set aside.
Step 2: In a large pan or skillet, heat the olive oil or butter over medium-high heat. Then, add the chicken and sear until both sides are browned. To a plate, transfer the cooked chicken and set it aside.
Step 3: Adjust the heat to medium and add the heavy whipping cream in the same pan along with the orange marmalade, mustard, Italian seasoning, garlic, onion powders, salt, and pepper. Then, stir in the roasted pecans. Cook for about 4 to 5 minutes, stirring often. Place the chicken back into the pan and continue to cook for an additional 6 to 8 minutes or until the chicken is completely cooked.
Step 4: Take the pan off the heat when done and serve the toasted pecan chicken skillet hot with spinach or rice. Enjoy!
