Tilapia in Roasted Pepper Sauce

PREP TIME: 10 MINS | COOK TIME: 20 MINS | TOTAL TIME: 30 MINS | SERVINGS: 4

I have been cooking my favourites for a month now, and I think it is time for a change. I love them still, but I would like to try something new. I found this Tilapia in Roasted Pepper Sauce recipe stashed on my saved recipes folder. I want to make this since, and I did! I never expected that this dish will taste super awesome, plus it turned out elegant making it worthy enough to serve on special occasions!

I will be making this scrumptious dish over and over again. Serving this with some garlic bread to soak up the luscious roasted pepper sauce is worth it! I cannot wait t make this again!

INGREDIENTS

1 pound tilapia fillets

3 tablespoons butter

1 medium onion, diced

2 garlic clove

6 ounces roasted peppers, chopped

6 ounces roasted peppers, pureed

¾ c. heavy cream

½ c. grated Parmesan cheese

salt and pepper

chopped parsley to garnish

How to make Tilapia in Roasted Pepper Sauce

Step 1: In a large, non-stick skillet, melt 2 tbsp butter. Once the butter has melted, add the fish to the skillet and fry on each side for about 3 to 4 minutes until completely cooked.

Step 2: With salt and pepper, season the fish. Take the fish out of the skillet and set it aside. Add the rest of the 1 tbsp butter to the same pan. Add the onion and saute it into the melted butter for about 5 minutes. Add the garlic along with the chopped and pureed roasted peppers and continue to cook for 5 minutes more. Then, add the heavy cream and Parmesan cheese. Turn the heat off and stir well. To taste, season with more salt.

Step 3: To the pan, place the fish back and spoon over the sauce.

Step 4: When done, remove from the heat and serve garnished with chopped parsley and grated Parmesan cheese. Enjoy!

NOTE:

You can use home-baked or store-bought roasted peppers for this recipe.
