This New England Spider Cake is my newest favorite. When I first made this cake, this instantly blew me away. It’s a unique, rustic, and very unexpected cake that is excellent for any occasion. New England Spider Cake is a thick, sweet cornmeal-topped cake with cream. This cake is baked in a hot skillet. And I have never tried baking in a skillet before! This delicious cake can be eaten any time of the day. I love this for breakfast, snacks, and as an after-meal dessert. The best part about this cake is you do not need a long list of ingredients. Just simple ones that you can already find in your pantry. This requires only ten minutes to prep. Pop this in the oven, and in under an hour you can devour this winner dessert! Enjoy a slice (even more!) and serve with apple syrup.
INGREDIENTS
2 eggs
4 tsp white vinegar
3/4 c. yellow cornmeal
3/4 c. sugar
2 c. milk
1/2 tsp baking soda
1 c. heavy cream
2 tbsp butter
1 c. all-purpose flour
Maple syrup, for serving
1/2 tsp salt
How to make New England Spider Cake
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: In a bowl, whisk the milk and vinegar until well combined. Keep it aside.
Step 3: Place the flour, cornmeal, sugar, baking soda, and salt in another bowl. Mix well until blended.
Step 4: To the milk, add the eggs and mix well until combined. Whisk this into the dry ingredients. Set aside.
Step 5: In a 12-inch cast-iron skillet, melt the butter. Once the butter has melted, pour in the batter, followed by the cream in the middle. Place the skillet into the preheated oven and bake for about 45 minutes or until golden brown.
Step 6: Remove from the oven when done, slice, and serve with apple syrup. Enjoy!
