These Caramelized Oatmeal Raisin Muffins Will Make You Bake Sale Famous

With a nice, deep oatmeal flavour, these muffins taste exactly like oatmeal cookies. The secret? Caramelized oatmeal!

This is a nice recipe if you are looking to enjoy oatmeal cookies in a muffin form. The idea of caramelizing the oatmeal first is such a clever idea. Plus the addition of raisins makes these muffins more delightful. Don’t like raisins? Feel free to omit it.

Ingredients

¼ c. butter

⅔ c. rolled oats

⅔ c. brown sugar, divided

¼ tsp ground cinnamon

¼ tsp ground allspice

⅔ c. water

1 ½ c. all-purpose flour

⅓ c. rolled oats

4 tsp baking powder

2 tsp wheat germ

1 Egg, lightly beaten

1 c. evaporated milk

1 ⅓ c. raisins

1 tbsp all-purpose flour

How to make Caramelized Oatmeal Raisin Muffins

Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C.

Step 2: Ready a muffin pan. Lightly grease or line with paper liners.

Step 3: In a skillet, heat the butter over medium heat. Once the butter has melted, add 2/3 cup oats, 1/3 cup brown sugar, cinnamon, and allspice to the skillet. Cook until golden brown, then stir in 2/3 cup water and the rest of the 1/3 cup brown sugar. Continue to cook until the mixture is a bit thick. Remove from the heat and let the mixture cool.

Step 4: Place the flour, 1/3 cup uncooked oats, baking powder, and wheat germ in a large bowl. Mix until everything is incorporated.

Step 5: Mix the egg and evaporated milk.

Step 6: In the middle of the flour mixture, make a well, then pour in the egg mixture and the cooked oatmeal. Mix well until just combined. In a tbsp flour, dredge the raisins, then fold into the batter.

Step 7: Into the prepared muffin cups, spoon the batter. Place in the preheated oven and bake for about 25 to 30 minutes.
