4 cube steaks (about 1/3 pound each)
1 1/2 c. all-purpose flour
2 teaspoons fresh ground black pepper, divided
2 teaspoons kosher salt or sea salt, divided
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 c. buttermilk
2 teaspoons TABASCO® Sauce (original)
2 Eggs
1 c. vegetable oil
Chicken Fried Steak Gravy:
4 tablespoons grease
4 tablespoons flour
2 to 3 c. whole milk
1/2 c. heavy whipping cream
salt and pepper to taste
How to make The Ultimate Chicken Fried Steak
Step 1: Add the flour, one teaspoon black pepper, one teaspoon salt, paprika, onion powder, garlic powder, baking soda, and baking powder in a shallow bowl. Combine and set aside.
Step 2: Whisk the buttermilk, TABASCO® Sauce, and eggs in another shallow bowl and set aside.
Step 3: Using a paper towel. Pat the cube steaks dry. Try to remove as much moisture as possible. Season the cube steaks with a tsp each of salt and pepper. Let the cubes sit for at least 5 minutes before patting them dry again with a paper towel.
Step 4: In the flour mixture, dredge the cube steaks. Shake the excess off, then dredge the cube steaks in the buttermilk-egg mixture. Allow the excess to drip off before coating in the flour mixture again. Then, shake the excess off.
Step 5: On a sheet pan or metal rack, place the breaded cube steaks, pressing the rest of the four mixture into the cube steaks to ensure that the whole steak is completely coated. Allow the cubes to sit for at least 10 minutes.
Step 6: Prepare the oven. Preheat it to 225 to 250 degrees F.
Step 7: In the meantime, in a heavy skillet or large cast-iron skillet, heat the vegetable oil over medium-high heat. Add much oil as needed depending on the size of the skillet.
Step 8: When the oil sizzle and bubble after dropping a breading into it the oil is ready (about 320 to 340 degrees F).
Step 9: Into the pan, place two steaks at a time. Fry the steaks for about 3 to 4 minutes per side until golden brown, flipping only once.
Step 10: Take the steaks out of the oil and onto paper towels to drain. Then, adjust the skillet heat to medium.
Chicken Fried Steak Gravy:
Step 1: Into a heat-safe bowl or glass measuring cup, pour the rest of the grease. Make sure to not scrape the skillet clean.
Step 2: To the hot skillet, add back the 4 tbsp grease.
Step 3: Whisk the flour in for about 2 to 3 minutes until nice and golden brown.
Step 4: Mix the cream and milk. Into the skillet, gradually drizzle in about 2 1/2 cups of the cream and milk mixture, whisking constantly,
Step 5: Remain whisking and allow the gravy to simmer. Continue to cook the gravy for another 5 to 7 minutes until smooth and creamy. Add in extra milk if the gravy becomes too thick. To taste, season with salt and pepper.
Step 6: Serve the fried steak with gravy, mashed potatoes, and some green veggies.
