My favorite! This sausage gravy is hands down one of the best comfort food! Pour this delicious sausage gravy over some warm biscuits. You can top them with a fried or poached egg if desired to kick off your mornings!

3-4 c. Whole Milk
1 pound Breakfast Sausage (in a roll or tube) – you can use your favorite
1/3 c. All-purpose Flour
2 teaspoons Black Pepper – add more, if desired
1/2 teaspoon Seasoned Salt
BISCUITS:
2 tablespoons Baking Powder
1 1/2 stick (3/4 c.) Cold Butter, cut into pieces
1 1/4 c. Buttermilk
3 c. All-purpose Flour
1/2 teaspoon Salt
HOW TO MAKE THE PIONEER WOMAN’S SAUSAGE GRAVY
SAUSAGE GRAVY:
Step 1: Tear small pieces of sausage and place them in a single layer on a large heavy skillet (preferably cast-iron). Cook the sausage on medium-high heat until browned. Then, adjust the heat to medium-low.
Step 2: Over the sausages sprinkle half of the flour. Mix well, then sprinkle in more flour, little by little. Stir again and continue to cook for another minute before pouring in the milk, stirring regularly.
Step 3: Cook the gravy for about 10 to 12 minutes, stirring often. Season the gravy with the seasoned salt and pepper and continue to cook until the gravy has thickened. You can add small amounts of milk if the gravy has thickened so soon.
BISCUITS:
Step 4: Prepare the oven. Preheat it to 400 degrees F.
Step 5: On two baking sheets, lay parchment paper.
Step 6: In a large bowl or food processor, combine the flour, baking powder, and salt. Then, add the pieces of butter and pulse until completely incorporated. If mixing in a large bowl, use a pastry cutter or your hands to mix the butter pieces. While the mixer is still running, drizzle in the buttermilk until you have a dough that is no longer crumbly.
Step 7: On the prepared baking sheets, drop clumps of dough using 2 spoons. Place in the preheated oven and bake the biscuits for about 15 to 17 minutes or until golden. If desired, you can brush each biscuit with melted butter right after you remove them from the oven.
Step 8: Over the warm biscuits, spoon the gravy. Serve right away. Enjoy!
NOTES:
You can add finely chopped fresh herbs to the gravy, such as thyme, chives, and parsley.
Smoked paprika, paprika, rosemary, sage, and cayenne are amazing spices if you want to add a little heat to your gravy.
For this recipe, you can use sausage links (without the casings) instead of bulk sausage.
For the best consistency use 2% milk or whole milk.
You can use Gluten Free Flour in place of regular flour for a gluten-free version.
