The Pioneer Woman’s Cowboy Quiche

This Cowboy Quiche is an amazing dish loaded with caramelized onions, smoky bacon, and melted cheddar cheese. Hearty, delicious, and the perfect light meal option is excellent for breakfast, brunch, or even dinner!

My family loves this quiche. We are obsessed with the impressive buttery pastry crust filled with bacon, cheese, eggs, and caramelized onions mixture that is baked to perfection. Enjoy this quiche either warm or cold. As for me, I prefer to serve this while still warm.

INGREDIENTS

8 slices bacon

1 unbaked pie crust

2 tbsp butter

8 large eggs

2 yellow onions, thinly sliced

1 1/2 c. heavy cream or half and half

2 c. sharp cheddar cheese, grated

Kosher salt and freshly ground black pepper, to taste

How to make The Pioneer Woman’s Cowboy Quiche

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Melt the butter in a large skillet over medium-low heat. Once the butter has melted, add the onions and fry for about 15 to 20 minutes until golden brown, stirring often. Set aside when done and let the onions cool.

Step 3: In the same skillet, cook the bacon until chewy, but not too crisp. Let the bacon cool, then chop into bite-sized pieces. Set aside.

Step 4: Into a pie pan, roll out the pie crust.

Step 5: Place the eggs, cream, salt, and pepper in a large bowl. Mix well, then add the onions along with the bacon and cheese. Stir well until blended.

Step 6: Into the pie crust, pour the filling. Using foil, lightly cover the pie crust. On a rimmed baking sheet, place the pie pan. Bake in the preheated oven for about 45 minutes. Uncover and continue to bake for another 10 to 15 minutes or until golden brown.

Step 7: Remove from the oven when done and allow the quiche to sit for about 10 to 15 minutes before serving. Slice the quiche. Serve and enjoy!
