This is the best meatloaf I’ve ever made! It is wrapped in bacon and baked to perfection. This also freezes beautifully. For an easy and quick meal, serve this scrumptious meatloaf with a side of mashed potatoes and roasted green beans.

Meatloaf:
2 lbs Ground Beef, 80% lean
12 slices Thin cut Bacon
1 c. Whole Milk
6 slices White Bread
1/4 tsp Seasoned Salt
4 whole Eggs, Beaten
1/3 c. fresh Parsley, minced
1 c. Parmesan Cheese, freshly grated
3/4 tsp Salt
Freshly Ground Black Pepper
Sauce:
1/3 c. Brown Sugar
1+1/2 c. Ketchup
1 dash Tabasco sauce
1 tsp Dry Mustard
How to make The Pioneer Woman Meatloaf
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: To a large bowl, add the bread and pour the milk over it. Allow the slices of bread to soak for about 5 minutes.
Step 3: Add the rest of the meatloaf ingredients to the bowl and mix using your hands. Make sure that the bread is well combined with the mixture but be careful not to overmix or else the ground beef will be tougher.
Step 4: Shape the meat into about 5 inches wide loaf and put it into a broiler pan to drain the fat. For easier clean-up, make sure to line the bottom of the pan with foil.
Step 5: On top of the loaf, line the bacon and very carefully tuck the ends on the bottom.
Step 6: Mix the sauce ingredients (brown sugar, ketchup, Tabasco sauce, and dry mustard) and brush 1/3 of it on the loaf. Now, place the meatloaf in the middle rack of the preheated oven and bake for about 45 minutes. Take the meatloaf from the oven and brush the other 1/3 of the sauce over it. Return the meatloaf to the pan and continue to bake for additional 25 minutes.
Step 7: When done, remove the meatloaf from the oven and allow it to sit for about 10 minutes before carving.
Step 8: Slice the meatloaf and serve it with the rest of the sauce. This goes so well with mashed potatoes and roasted green beans. Enjoy!
Notes:
To make this meatloaf ahead, assemble and wrap it in foil or plastic wrap. Place it in the fridge and bake the next day.
This also freezes beautifully. When ready to serve, defrost the meatloaf in the fridge overnight before baking.
