The Original “Easiest Pineapple Cake”

Prep: 5 mins | Cook: 40 mins | Serves: 15

One of my go-to desserts, this easy Pineapple Cake became my family’s favourite in a heartbeat! With a refreshing taste, this super moist dessert screams tropical! Perfectly sweet with sprinkles of coconut, this cake deserves a place in everyone’s heart. If you love pineapple so much, you have to give this recipe a try, and I am pretty sure you’ll be addicted! And the best part is, the frosting seeps into the cake like magic, making it a bit gooey and dense.

Ingredients

2 cups all-purpose flour

2 cups of sugar

2 Eggs

1 teaspoon baking soda

1 teaspoon vanilla

1 pinch salt

1 can(s) crushed pineapple (undrained) in its juice – not syrup, 20 ounces

1 cup chopped nuts, optional

CREAM CHEESE FROSTING:

1/2 cup butter or 1 stick

1 package cream cheese, softened, 8 ounces

1 teaspoon vanilla

1 1/2 cups confectioners’ sugar

shredded coconut for garnish, optional

How to Make The Original “Easiest Pineapple Cake”

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In a large mixing bowl, add the cake ingredients (flour, sugar, eggs, baking soda, vanilla, salt, undrained crushed pineapple, and if using, chopped nuts. Mix well.

Step 3: Into a greased 9 x 13-inch pan, transfer the batter.

Step 4: Place inside the preheated oven. Bake for about 35 to 40 minutes, or until the top of the cake is golden brown.

Step 5: To make the frosting, beat the butter, cream cheese, and vanilla until creamy.

Step 6: Slowly mix in the powdered sugar. Beat until well mixed.

Step 7: While still warm, frost the cake with the cream cheese frosting and if desired, sprinkle with chopped nut.
