This is one of the recipes I treasure the most. A fantastic recipe more than 50 years old. I get this from one of my grandma’s old books. And I can attest that this is the best Mississippi Mud Cake ever! Super moist cake with fudgy icing on top. I urge you to try this amazing cake very soon because this will change your game forever!

CAKE:
2 cups flour
2 cups sugar
2 teaspoons baking soda
1/4 teaspoon salt
1/3 cup cocoa
1 cup buttermilk (or 1 tablespoon vinegar to 1 cup milk, let sit for an hour)
1 cup vegetable oil
1 cup boiling water
1 teaspoon vanilla
2 Eggs
ICING:
1 cup sugar
2 tablespoons light corn syrup
1/4 cup milk
2 tablespoons butter
1/2 pkg chocolate chips (6 ounces)
1 teaspoon vanilla
miniature marshmallows
1/3 cup chopped nuts, optional
How to make The Best Mississippi Mud Cake Ever
Step 1: Prepare the oven. Preheat it to 350 degrees. Set aside a greased and floured 9 x 13-inch pan.
Step 2: Combine the flour, sugar, soda, salt, and cocoa. Add the buttermilk along with oil, boiling water, vanilla, and eggs. Beat until well mixed and pour the batter into the prepared pan. Place in the preheated oven and bake for about 35 to 45 minutes until a toothpick inserted in the centre of the cake comes out clean.
Step 3: To make the icing, whisk the sugar, corn syrup, milk, and butter in a saucepan. Allow it to boil for about 2 minutes (not longer than 2 minutes). Add the chocolate chips, vanilla, and nuts. Combine until the chocolate chips are completely melted.
Step 4: Remove the cake from the oven when done and immediately sprinkle the miniature marshmallows all over the top of the cake, then drizzle with the hot icing mixture.
