3/4 c. butter (1 1/2 sticks)
1 1/4 c. dark cocoa powder
1 c. brewed coffee (Or any liquid. I guess some people are against adding coffee, but it just brings out the flavour of the chocolate.)
2 c. milk (I used coconut milk)
1 1/2 c. brown sugar
1 1/2 c. white sugar
3 Eggs, lightly beaten
1 tbsp vanilla
2 1/4 c. all-purpose flour (or rice flour for gluten-free)
1 tsp baking soda
3 tsp baking powder
3/4 tsp salt
German chocolate frosting:
1 c. brown sugar
1 c. evaporated milk
3 Egg yolks
1/2 c. butter (1 stick)
3 tsp vanilla
3 c. Sweetened Flaked Coconut
1 1/2 c. pecans (lightly toasted in the oven or a pan on the stove)
Milk chocolate frosting:
2 c. chopped Milk Chocolate or milk chocolate chips
2 sticks butter, softened
5 tbsp cocoa powder
1 tsp vanilla
5 c. powdered sugar
3-6 tbsp milk
To make the cake:
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: On the bottom of three 8-inch pans, place a greased circle of parchment. You can grease the pans and dust them with cocoa powder.
Step 3: Mix the butter and cocoa. Allow melting on the stove or microwave. Gradually stir in the coffee and milk. Then, add the sugars along with the eggs and vanilla. Mix well until smooth.
Step 4: Whisk the flour with baking soda, baking powder, and salt. Add this to the rest and stir until just combined.
Step 5: Between the prepared pans, evenly divide the batter. Place in the preheated oven and bake for about 45 minutes. The cake is done if a toothpick inserted in the centre comes out clean.
Step 6: Remove the cakes from the oven when done and allow them to cool before taking them out of the pans. Then, cool completely.
German chocolate frosting:
Step 7: Whisk the sugar, milk, yolks, and butter. On the stove, cook the mixture while stirring until bubbling and has thickened. Now, add the vanilla along with the coconut and pecans. Remove from the heat when done and allow the frosting to cool before frosting the cake.
Milk chocolate frosting:
Step 8: In the microwave, melt the chocolate.
Step 9: Once the chocolate has melted, add the butter and beat until mixed. Then, add the cocoa powder along with vanilla.
Step 10: Add the powdered sugar alternately with the milk until you reached your desired consistency.
To assemble the cake:
Step 11: Start by filling the middle layers, then top with the German chocolate frosting. With the milk chocolate frosting, frost the edges of the cake.
