The Best Filipino Chicken Adobo

If you haven’t tried Filipino Adobo yet, you are missing out! This recipe here will give you the best Chicken Adobo. Easy to throw together with just pantry ingredients. One bite and you’ll know!

Ingredients

4 lb bone-in, skin-on chicken thighs and/or legs

2 tablespoons cooking oil

3/4 c soy sauce

1/2 c cane vinegar or white vinegar

1/2 cup sake or water

1 tablespoon fish sauce

3 tablespoons sugar

1/3 c chopped garlic

zest from 1 lime or lemon

4 bay leaves

1/2 teaspoon black pepper

chopped green onions and cilantro for garnish, optional

How to make The Best Filipino Chicken Adobo

Step 1: Place a large Dutch oven on the stove and turn the heat to medium-high.

Step 2: Add oil and allow it to become hot.

Step 3: Add the chicken thighs and cook for about 7 minutes or until golden brown.

Step 4: To make the sauce, add the vinegar, soy sauce, fish sauce, chopped garlic, sugar, lime zest, bay leaves, peppers, and sake in a medium mixing bowl. Stir until well combined.

Step 5: Turn the chicken and add the adobo sauce. Allow it to boil.

Step 6: Reduce the heat to medium-low and cover the pot.

Step 7: Allow the adobo to simmer for about 25 minutes.

Step 8: Remove the cover and stir the adobo until the chicken thighs are well coated by the delicious sauce.

Step 9: Remove from the heat.

Step 10: Serve the chicken thighs over rice and make sure to top it with the yummy/sweet sauce. Enjoy!
