Perfect for a quick and easy dinner. This delectable dish is made of fresh green beans, ginger, and garlic instantly sauteed with tender beef strips and tossed in a light savoury sauce. One of my favourite stir-fry dishes as it keeps well in the fridge. And I often enjoy the leftovers at the office for a filling lunch.

1 tsp coconut oil or light flavoured olive oil
1 pound skirt steak cut against the grain into very thin strips
1 pound green beans trimmed
3″ piece of ginger about 1/4 c peeled and cut into very thin matchsticks
4 cloves garlic minced
2 tbsp water
2 tbsp fish sauce or soy sauce
1/2 c fresh basil leaves roughly chopped, plus more for topping
cooked rice for serving
How to make Thai Steak and Green Bean Stir Fry
Step 1: Heat oil in a very large skillet over medium-high heat.
Step 2: Once the oil is hot, add the steak. Cook for about 4 minutes, constantly tossing and stirring until just browned. Once done, take the cooked steak out of the skillet and onto a plate.
Step 3: Add to the skillet the green beans, ginger, and garlic. Toss to combine before pouring in the water. Cover the skillet and continue to cook for 5 minutes more over medium-high heat.
Step 4: Remove the cover and constantly toss the green beans for another 5 to 7 minutes until crisp and tender.
Step 5: Add the cooked steak back to the skillet along with the juices, fish sauce, and basil. Quickly toss to coat and cook for a minute more.
Step 6: If desired, sprinkle with extra basil.
Step 7: Serve directly over rice.
