Texas Sheet Cake

Texas Sheet Cake is a light and fluffy cake with decadent chocolate icing that has been baked in a single sheet pan. It’s one of the most popular potluck desserts for good reasons!

Ingredients

Cake:

2 large eggs

2 c. all-purpose flour

½ tsp salt

1 tsp baking soda

1 c. water

6 tbsp unsweetened cocoa powder

½ c. buttermilk

2 c. granulated sugar

1 tsp vanilla extract

1 c. salted butter

Chocolate Glaze:

½ c. butter

6 tbsp milk

3 ½ c. powdered sugar

4 tbsp unsweetened cocoa powder

½ tsp vanilla

¾ c. chopped toasted pecans or walnuts finely chopped

Pinch of salt

How to make Texas Sheet Cake

Step 1: Prepare the oven. Preheat it to 350 degrees F. Then, lightly grease a large, rimmed 12 x 18-inch baking sheet and set it aside.

Step 2: Combine the flour, sugar, baking soda, and salt in a large bowl until blended. Set aside.

Step 3: Whisk the water, butter, and cocoa powder in a saucepan over medium heat. Bring everything to a boil, stirring until the lumps are gone.

Step 4: Over the dry ingredients, pour the chocolate mixture, and mix well until incorporated. Then, add the buttermilk (or sour cream), eggs, and vanilla. Mix well using a hand mixer until blended.

Step 5: Into the prepared pan, pour the batter and spread it in an even layer. Place in the preheated oven and bake for about 18 to 20 minutes or until the cake springs back lightly when touch.

Icing:

Step 6: In the meantime, combine the butter, cocoa powder, milk, and salt in a medium saucepan. Heat while stirring over medium heat just until the mixture comes to a simmer.

Step 7: Quickly take the pan off the heat, then stir in the vanilla followed by the powdered sugar until smooth. Fold in the chopped nuts. Keep the icing warm and give it a try every so often until the cake is ready.

Step 8: When the cake is done, remove it from the oven and allow it to cool for about 10 to 12 minutes before pouring the hot icing on the warm cake. Using a spatula, spread the icing evenly and allow the frosting to set for about 20 minutes.

Step 9: Slice the cake into squares and serve warm or at room temperature. Note that the frosting will be completely set after about 1 to 2 hours.
