Texas Cowboy Stew

My kid wants to host a game day at home. They’ll be watching football, so I expect sleepovers, too. So I am prepping, and my kid’s friends especially requested stew. They said they love my Texas Cowboy Stew, so they want me to make it again. Everyone is excited, and so I am. It’s been months since their last sleepover with the pandemic and all.

Texas Cowboy Stew is an easy dish to feed the whole town! A no-fuss recipe packed with flavour that you can throw together using just pantry ingredients and with minimal effort. This stew is loaded with meat, sausage, and veggies in a mouthwatering, spicy sauce. So how do you make this filling stew from scratch? Simply follow this simple step-by-step recipe, and you can thank me later.

Ingredients

2 pounds ground beef

2 packages of kielbasa sausage sliced into ½” pieces

2 garlic cloves, minced

1 onion, chopped

2 (14.5ounces) cans peeled and diced tomatoes, drained

4 medium baking potatoes, peeled and diced

2 (15ounces) cans of pinto beans, with liquid

1 (15.2ounces) can whole kernel corn, Drained

2 (14.5ounces) can diced tomatoes with green chile pepper, with liquid

1 (10ounces) package frozen mixed vegetables

4 c. of water

2 teaspoons ground cumin

2 teaspoons chilli powder

Salt and pepper to taste

How to make Texas Cowboy Stew

Step 1: Saute the onion in a dutch oven over medium heat. Then, add the ground beef and cook until the meat is brown.

Step 2: To the meat and onion mixture, add the sliced sausage, then pour in the tomatoes, pinto beans, corn, potatoes, diced tomatoes chiles, and veggies. Stir well until everything is incorporated before adding the spices.

Step 3: Pour in the water. Bring the stew to a boil, then simmer for another hour.
