These tortillas are the best thing I have tried ever! Oh, man, this recipe is a must-try. Enjoy!
Ingredients:
2-3 pounds coarse ground chuck
2 tablespoons cooking oil
1 medium white onion
2-3 medium jalapeno or serrano peppers
1/3 bunch fresh cilantro
1 tablespoon chilli powder
1 tablespoon smoked paprika
1 teaspoon of sea salt
1 teaspoon ground black pepper
12+ homemade corn or flour tortillas (links in comments or can use store-bought)
1 cup grated Monterey jack cheese
1 cup grated Mexican blend cheese
2-3 cups **enchilada sauce RED HOT ENCHILADA SAUCE (SALLYE) in comments)
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Slice the peeled onions into four. Slice the peppers into two and discard the seeds, veins, and stems. Slice the stems of the cilantro and discard.
Step 3: Place the sliced onion, peppers, and leaves of the cilantro into the food processor. Pulse for a few times until minced.
Step 4: In a medium mixing bowl, add the Monterey jack cheese and Mexican blend cheese. Toss until combined.
Step 5: Place a large heavy non-stick skillet on the stove and turn the heat to medium-high.
Step 6: Add the oil and allow it to become hot.
Step 7: Add the ground chuck, paprika, chilli powder, salt, and pepper. Stir and cook for a few minutes until a little grey.
Step 8: Add the minced cilantro, onions, and peppers. Stir and cook for about 2 minutes.
Step 9: Remove the skillet from the heat.
Step 10: Apply cooking spray on a 9×13-inch baking dish.
Step 11: Arrange 4 to 6 tortillas on a paper towel cover with another one.
Step 12: Place the covered tortillas inside the microwave and heat for 20 seconds or until soft. Repeat this method for the rest of the tortilla.
Step 13: Place the hot tortillas on a cutting board.
Step 14: Fill each tortilla with the meat mixture and sprinkle a generous amount of cheese on top. Roll and arrange them into the prepared dish with seams down.
Step 15: Spread the sauce on top of the rolled tortillas and sprinkle the rest of the cheese.
Step 16: Place the baking dish inside the preheated oven and bake for 25 to 30 minutes or until done.
Step 17: Serve and enjoy!
