Your favourite Tex-Mex Beef Enchiladas made simple with this amazing recipe. Smothered in a mouthwatering sauce, these beef enchiladas are on fire! Thick, smooth, with all the exciting flavours bursting in your mouth in every bite!

2-3 lbs coarse ground chuck
2 tbsp cooking oil
1 medium white onion
2-3 medium jalapeno or Serrano peppers
1/3 bunch fresh cilantro
1 tbsp chilli powder
1 tbsp smoked paprika
1 tsp of sea salt
1 tsp ground black pepper
12+ homemade corn or flour tortillas (or store-bought)
1 c grated Monterey jack cheese
1 c grated Mexican blend cheese
2-3 c enchilada sauce RED HOT ENCHILADA SAUCE (or store-bought enchilada sauce)
How to make Tex-Mex Beef Enchiladas
Step 1: Ready the oven. Preheat it to 175 degrees C or 350 degrees F.
Step 2: Peel, then, cut the onions into 4 slices. The peppers into two slices, discarding the seeds, veins, and stems. Discard the stems of the cilantro and just keep the leaves. Put everything inside a food processor and pulse until well minced.
Step 3: Add the Monterey jack cheese and Mexican blend cheese in a medium mixing bowl. Toss until incorporated.
Step 4: Heat the oil in a large skillet over medium-high heat. Add in the ground chuck, paprika, salt, pepper, and chilli powder. Stir and cook until the meat is done.
Step 5: Pour over the meat in the skillet the minced peppers, onions, and cilantro and continue to cook for 2 minutes more or until fragrant. Then, remove from the heat.
Step 6: Grease a 9 x 13-inch baking dish with cooking spray.
Step 7: Place 4 to 6 tortillas in the microwave and heat for about 20 seconds. Don’t forget to cover them with paper towels. Do this at least 2 to 3 times.
Step 8: In the centre of each tortilla, place spoonfuls of the mixture and sprinkle over the cheese. Roll and transfer the rolled tortillas seam side down into the prepared baking dish and pour the sauce over the entire tortillas. Evenly sprinkle over the remaining cheese.
Step 9: Bake in the preheated oven for about 25 to 30 minutes or until the cheese is brown and bubbly.
Step 10: Once done, remove the dish from the oven and serve immediately.
Note:
You can serve these enchiladas with refried beans, salsa, charro, and Spanish rice.
