TENDER AND JUICY INSTANT POT CHICKEN BREASTS

This is the most succulent chicken breast! Packed with amazing flavours and perfect to serve with just about anything. Easily throw this together using only a few simple ingredients and in your Instant Pot for a quick and delicious meal that your entire family will surely enjoy!

Ingredients

2 tablespoons olive oil, divided

4 (about 6 ounces each) large boneless, skinless chicken breasts

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1 teaspoon Italian Seasoning

salt and fresh ground pepper, to taste

1 cup pineapple juice, (you can also use low sodium chicken broth or water)

HOW TO MAKE TENDER AND JUICY INSTANT POT CHICKEN BREASTS

Step 1: Start by rinsing the chicken with water. Then, pat them dry using paper towels.

Step 2: Into a small bowl, combine the garlic powder, Italian seasoning, onion powder, salt, ground black pepper, and paprika. Drizzle with olive oil and mix until well blended, and you have a mixture that resembles a paste.

Step 3: With the paste, rub each chicken breast, coating the chicken well.

Step 4: Set the Instant Pot to “Saute”, then drizzle 1 tablespoon olive oil into the pot. Once the oil is hot, add the chicken breast to the pot and sear for about 2 minutes on each side or until golden brown. To a plate lined with paper towels, transfer the chicken breasts.

Step 5: Into the pot, pour the pineapple juice. Deglaze the pot and return the chicken breasts. Put the lid on and cook on a high setting for 5 minutes.

Step 6: When the time is up, natural release the pressure. Set the chicken breasts aside when done and let them rest for a couple of minutes.

Step 7: For the gravy (optional), set the Instant Pot to “Saute” and let the sauce boil. Stir in the slurry and simmer for a couple of minutes until the sauce has thickened.

Step 8: Over the chicken breasts, pour the gravy, and serve garnished with some fresh herbs. Enjoy!
