Taco Stuffed Bell Peppers (Keto Stuffed Peppers)

PREP TIME: 8 minutes | COOK TIME: 35 minutes | TOTAL TIME: 43 mins | Yield: 8 Servings

Tasty, fun to make stuffed bell peppers packed with ground beef, melted cheese, salsa, and sour cream. This easily became my family’s favourite!

Ingredients

4 medium green peppers, halved

1.5 pounds ground beef, browned

1 packet taco seasoning mix, or seeking good eats homemade taco seasoning recipe

3/4 c water

1-1/2 c cheddar cheese

1 c sour cream

1/2 c salsa

How to make Taco Stuffed Bell Peppers

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Wash and slice the peppers in lengthwise half through the middle, then, remove the seeds.

Step 3: Put the peppers in a casserole dish with 1/4 cup water. Microwave for about 7 to 10 minutes, covered, or until soft. Regularly check the peppers to see if they are done.

Step 4: Meanwhile, cook the ground beef until browned and cooked through.

Step 5: Add in the taco seasoning and water and cook following the package/recipe directions.

Step 6: Once the meat is cooked, stir in the sour cream, salsa, and a cup of cheddar cheese.

Step 7: Grease with non-stick spray a 13 x 9-inch baking dish.

Step 8: Transfer the cooked peppers to the prepared dish and stuff them with the meat and cheese mixture, then, top with the rest of the cheese.

Step 9: Place inside the preheated oven and bake for about 20 to 30 minutes or until the peppers are heated through and the cheese has melted.

Step 10: Once done, serve with your favourite taco ingredients with a side of salsa.

Tip: After 5 to 6 minutes, begin to check the doneness of the peppers. Cooking time varies depending on the size and microwave wattage.
