Taco Lasagna

PREP TIME: 20 MINS | COOK TIME: 40 MINS | TOTAL TIME: 1 HR | SERVINGS: 15

Meat lasagna with gooey cheese on top. This flavorful taco lasagna is another of my favorite Mexican dishes that anyone can make in a snap using only a few simple ingredients. It’s a family-friendly dish that’s great for entertaining, too!

Ingredients

1 poblano pepper (seeded and diced)

1/2 c. chopped onion

9 flour tortillas (8”)

15 oz. black beans, rinsed and drained (1 can)

16 oz. refried beans (1 can)

2 lbs lean ground beef

2 envelope taco seasoning

4 c. shredded Mexican cheese blend or cheddar cheese

salt and black pepper to taste

29 oz. Mexican diced tomatoes, undrained (2 cans, 14.5 oz. each) (Rotel Mexican)

1 c. water

How to make Taco Lasagna

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, grease a 9 x 13-inch baking pan.

Step 2: Cook the beef in a large skillet along with the pepper and onion over medium-high heat or until the meat has browned. When done, drain the excess grease.

Step 3: To the skillet, pour in the water and add the seasoning packets. Bring everything to a boil, then decrease the heat. Simmer the sauce for about 2 minutes, uncovered. Then, stir in the black beans and tomatoes (with the juice). Simmer for another 10 minutes, uncovered.

Step 4: In the bottom of a greased 13 x 9-inch baking pan, lay two tortillas. Grab the third tortilla and break it into pieces to fill the holes and complete the layer.

Step 5: Over the tortillas, spread half each of the refried beans and beef mixture. On top, sprinkle 1 cup of cheese.

Step 6: Do the same layers again starting from the tortillas and ending with another cup of cheese.

Step 7: For the final layer, lay the rest of the tortillas on top and sprinkle with 2 cups of cheese.

Step 8: Using foil, cover the lasagna and place it in the preheated oven. Bake for about 25 to 30 minutes or until the lasagna has heated through and the cheese has melted.

Step 9: Remove from the oven when done and serve the taco lasagna right away garnished with some fresh cilantro, sour cream, sliced avocado, and fresh Pico de Gallo. Enjoy!
