Taco Casserole

Today is my favourite day! It’s Mexican Feast day! On the menu, we are going to make this amazing Taco Casserole. Easy, crazy delicious, and always a huge hit! Pair it with nachos and top with favourite toppings for a fast and filling meal that everybody will love! It’s also perfect to serve when you have a guest coming over.

I love serving this as is and laying all the toppings aside so everyone can just pick what toppings they like. This is what I am going to do again tonight. I’m sure it will be a blast as usual! INGREDIENTS

TACO CASSEROLE:

1 15-ounces can refried beans

1 lb of ground beef

1 standard size package taco seasoning

2 c. Fritos Corn Chips lightly crushed

1 c. mild salsa

2 c. grated cheese divided (Colby Jack, Monterey Jack, Cheddar or Mexican Blend)

TOPPINGS:

1 c. shredded lettuce

1 c. sour cream

1 c. Fritos chips or use shredded cheese, if desired)

1 c. cut tomatoes

1 c. sliced black olives

How to make Taco Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: Brown the ground beef, then add the taco seasoning following the package directions.

Step 3: In the meantime, pour the crushed Fritos into the bottom of an 8 x 8-inch baking dish.

Step 4: Cook the refried beans with the salsa and a cup of cheese until hot. You can do this either on a stovetop or microwave. When done, spread this over the Fritos followed by the ground beef mixture.

Step 5: Lastly, sprinkle the rest of the 1 cup cheese on top.

Step 6: Place the casserole in the preheated oven and bake for about 15 minutes or until cooked through and the cheese has melted.

Step 7: Take the casserole out of the oven and serve right away with your favourite toppings. Enjoy!
