I am obsessed with Taco Bell. There was a time that I spend most of my lunch breaks in Taco Bell. That is why I was so excited when I found this easy Mexican Pizza recipe. A copycat of taco bell’s classic with fried tortillas, refried beans, seasoned ground beef, enchilada sauce, and gooey, melted cheese! Simple and fast to assemble and taste exactly like the real thing.

Pizzas:
1 lb ground beef
1 packet taco seasoning
¾ c. water
1 c. vegetable oil
8 flour tortillas (taco size)
1 (15 ounces) can refried beans
1 (10 ounces) can enchilada sauce
2 c. shredded Mexican cheese blend
Toppings:
diced tomatoes
sliced green onion
sliced olives
sliced green onions
HOW TO MAKE TACO BELL MEXICAN PIZZA
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Cook the ground beef in a large skillet, crumbling as it cooks until brown. When done, drain the excess grease and return the cooked beef to the skillet. Add the taco seasoning packet and water. Stir to combine and bring the mixture to a boil. Once boiling, decrease the heat to a simmer until the sauce has thickened.
Step 3: Heat the oil in a large skillet over medium heat. Once the oil is hot, add the tortillas to the skillet a piece at a time and cook for about 3 to 4 minutes, flipping often until crisp. Do the same with the remaining tortillas. Set them aside.
Step 4: In the meantime, in a microwaveable-safe bowl, heat the refried beans.
Step 5: Slather a generous layer of the refried beans on each tortilla and top with the seasoned ground beef. On top, place another tortilla and slather on top around 2 tbsp of enchilada, then top with some shredded cheese. Assemble the remaining pizza until done.
Step 6: On a large nonstick baking sheet, place the pizzas and bake in the preheated oven for approximately 8 to 10 minutes until the cheese has melted. Remove from the oven when done, and serve immediately with your fave toppings. Enjoy!
