Sweet Potato and Apple Sausage Breakfast Skillet

Are you looking for an egg-free and healthy breakfast for your family? Then, this easy Sweet Potato and Apple Sausage Breakfast Skillet are all you need. Made with only a few simple ingredients, you can easily throw this together in under an hour! You should give this a try very soon. I know you’ll love this just like my family does!

I have been making this breakfast skillet for as long as I can remember. It has been my-go and my family’s favourite nutritious breakfast. It is sweet and savoury and absolutely perfect for your entire clan! The pop of acidity from the lemon effortlessly brings this dish together.

This breakfast skillet is so darn good! The original version is without egg but I have to admit I tried this with a fried egg on top and it’s delicious! I’ll sure be making this again and again!

INGREDIENTS

4 links Chicken Apple Sausage sliced

1 tablespoon Avocado Oil or oil of choice

1 Sweet Potato peeled and diced

¼ c. Onion diced

2 c. Spinach fresh

1 Green Apple diced

1 Lemon

¼ teaspoon Sea Salt

How to make Sweet Potato and Apple Sausage Breakfast Skillet

Step 1: In a large skillet, heat the oil over medium heat. Once the oil is hot, add the sliced sausage to the skillet. Cook until brown, then set aside when done.

Step 2: To the same skillet, add the sweet potato, salt, and onion. Cook for approximately 10 minutes while stirring often until the sweet potato is just beginning to get tender and has a bit of colour.

Step 3: Add the diced green apple to the skillet along with spinach. Saute further until the potatoes are tender and the spinach has wilted.

Step 4: Add the cooked sausage and lemon juice. Stir until incorporated.

Step 5: Adjust the taste according to taste.

Step 6: Serve and enjoy!
