2 tbsp chilli powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp pepper
2 (12- to 16-oz. each) pork tenderloins, trimmed
1 tbsp vegetable or canola oil
1/4 c. ketchup
2 tsp cider vinegar
1 1/2 tsp sugar
HOW TO MAKE SWEET AND SPICY PORK TENDERLOIN
Step 1: To the middle position, adjust the oven rack. Prepare the oven. Preheat it to 450 degrees F.
Step 2: Using a paper towel, pat the pork tenderloin dry.
Step 3: Mix the chilli powder, paprika, salt, and pepper in a small bowl. Set aside a tbsp of the spice mixture and rub the remaining all over the pork tenderloins.
Step 4: Heat oil in a large 12-inch nonstick skillet over medium heat. Once the oil is rippling and hot, add in one layer the pork tenderloins and cook for about 5 to 7 minutes until brown. Flip the pork tenderloins as needed.
Step 5: To an aluminium-foil-lined baking pan, transfer the pork. Place in the preheated oven and bake for about 15 to 18 minutes until the internal temperature of the meat reads 140 degrees.
Step 6: To a platter or plate, place the pork and cover it with foil. Before serving, allow the pork to rest for at least 5 minutes.
Step 7: Mix the reserved spice mixture with the mixture, ketchup, vinegar, and sugar in a bowl. Rub this all over the pork.
Step 8: Slice and serve. Enjoy!
