This super easy vegetable bake is so easy and quick to make. This has been my go-to if I want an all veggies weeknight dinner that I can throw together in a heartbeat! Also, if you have veggies waiting to rot in your veggie drawer, this easy recipe is your best option to use them all up. It is so good even your picky eaters will not think twice to grab a plate or two.

Ingredients
2 tablespoons Butter
400 grams Potatoes Peeled and sliced lengthways thinly
1 teaspoon Mixed Herbs
1 Can Crushed Tomatoes
400 grams Pumpkin Thinly sliced
1 Carrot, Grated
1 Grated Zucchini
1/2 c. Parmesan Cheese grated
1 teaspoon Salt And Pepper To Taste
How to make Super Easy Vegetable Bake
Step 1: Prepare the oven. Preheat it to 180 degrees. Grab a 1.5 litres rectangular baking tray and lightly grease it.
Step 2: In the microwave, melt the butter. Once melted, add the herbs and stir well.
Step 3: In a bowl, place the vegetables and pour the butter mixture over. Toss until the veggies are completely coated.
Step 4: In the prepared baking tray, layer the vegetables. Over the veggies, pour the canned tomatoes, then season them well.
Step 5: Tent the tray with foil. Place in the preheated oven and bake for about 45 minutes.
Step 6: Take the tray out of the oven and remove the foil. Sprinkle the cheese on top of the veggies and return the tray to the oven. Resume baking for another 15 minutes or until the cheese is golden and the veggies are cooked through.
Step 7: When done, remove the tray from the oven and serve the vegetable bake right away. Enjoy!
