Stuffed Pepper Recipe

Prep Time: 15 mins | Cook Time: 1 hr 10 mins | Total Time: 1 hr 25 mins | Servings: 4

Flavorful, crazy delicious, and impressive Stuffed Pepper. A certified crowd-pleaser and one of my most favourite dinners of all time!

Ingredients

2 tbsp olive oil

1 lb ground beef

1 medium onion, diced

4 bell peppers (use any color)

1 tsp garlic powder

one 15 oz. can diced tomatoes, divided and drained

1/4 tsp red pepper flakes

1 c. cooked rice

1 c. shredded cheddar cheese, divided

1 c. shredded mozzarella cheese, divided

1 tsp salt

1/2 tsp black pepper

How to make Stuffed Pepper

Step 1: After slicing the tops off the peppers, you also have to clean the seeds out. For the tops, dice them to use in the filling.

Step 2: In an 8 x 8 or 9 x 9-inch pan, place the peppers upright. Slightly cut off the bottom of the peppers if needed to make them stand upright.

Step 3: In a saute pan, cook the ground beef until no longer pink. Set the ground beef aside when done, then wipe the pan clean. To the same pan, drizzle 2 tbsp olive oil. Add the diced peppers, diced onions, and half the can of drained diced tomatoes. Sprinkle with salt, pepper, and garlic powder. Cook for approximately 10 minutes, stirring until the peppers are tender. Now, add the cooked rice along with the cooked ground beef, a half-cup each of the mozzarella, and cheddar. Mix well until blended.

Step 4: With the meat mixture, stuff each pepper, then pour the rest of the tomatoes on top of the stuffed peppers and sprinkle with the red pepper flakes.

Step 5: Tent with foil and place the pan in a 350 degrees preheated oven. Bake the stuffed pepper for about an hour. Uncover and top the peppers with a mixture of half cup each mozzarella and cheddar cheese. Return to the oven and bake for 15 minutes more.

Step 6: Serve and enjoy!
