Stuffed Meatloaf – Keto/Low Carb

Meatloaf is one of the dishes that you’ll never get rid of. There are lots of meatloaf recipes online that you can find. Every person has their different take on meatloaves. One of my go-to versions is this Keto/Low Carb Stuffed Meatloaf recipe. The ingredients are only a few and anyone can whip this up in no time! Make sure to your hands to mix the ingredients. Don’t worry this recipe is worth getting your hands meaty greasy.

The sauteed onions make this meatloaf climbed to the top. And the melty cheese in each bite is amazing! I’ll rate this Stuffed Meatloaf five all the way!

Ingredients

2 pounds ground beef

1/2 c. almond flour

2 large Eggs

1/2 large onion, chopped and sauteed

8 ounces sliced provolone cheese

salt and pepper to taste

chopped parsley (we use these herb shears)

How to make Stuffed Meatloaf – Keto/Low Carb

Step 1: Saute the chopped onion with a bit of oil and set it aside to cool.

Step 2: Add the ground beef, almond flour, eggs, chopped parsley to a large bowl. Mix well. Add in the onions and mix to incorporate.

Step 3: Line a glass of loaf pan with around 2/3 to 3/4 of the meat mixture and make a cavity in the centre, trying to keep the edges even.

Step 4: With half the cheese slices, line the cavity.

Step 5: To cover the cavity/cheese, add the rest of the meat mixture on top.

Step 6: On top, add the rest of the slices of cheese.

Step 7: Place in a preheated 400 degrees oven, bake for about 1 hour to 1 hour and 15 minutes, covered with foil.

Step 8: Remove the foil and bake for 10 minutes more until the cheese has melted and the edges of the meatloaf are brown.

Step 9: Before removing the meatloaf, drain the excess grease in the pan.

Step 10: Allow the meatloaf to cool a little, then slice.

Step 11: Serve and enjoy!
