Big Boys Strawberry Pie

Strawberry is my favorite! Thus, my obsession with anything strawberry like this Strawberry Pie. This delightful pie is super easy to whip using just a few simple ingredients. Flaky pie crust filled with fresh strawberries that have been drizzled with a simple glaze – I could not ask for anything more! Enjoy a big slice of this strawberry pie topped with a dollop of whipped cream.

Ingredients

Pie Crust:

3 tbsp powdered sugar

4 oz. butter at room temperature

1 tsp vanilla extract

1 c. all-purpose flour

Strawberry pie filling:

3/4 c. granulated sugar

2 tbsp cornstarch

1/4 tsp salt

1/4 tsp red food coloring

1 pint whipped cream for garnish

1 c. water

1-quart strawberries, rinsed, stemmed, and dried

How to make Big Boys Strawberry Pie

Pie crust:

Step 1: Prepare the oven. Preheat it to 350 degrees. Grease a pie pan with butter.

Step 2: Place the butter, vanilla, flour, and powdered sugar in a bowl. Mix well until combined. Into the prepared pie pan, pour the mixture. Prick the sides using a fork.

Step 3: Place in the preheated oven and bake for about 10 to 15 minutes or until light brown.

Step 4: Take the crust out of the oven when done and allow this to cool.

Pie filling:

Step 5: In a saucepan, whisk the water, salt, granulated sugar, cornstarch, and food coloring. Cook for about 5 minutes over medium heat, stirring constantly, until the mixture has thickened.

Step 6: Remove the saucepan from the heat and allow the filling to cool.

Step 7: In the meantime, place the berries inside the cooled crust. Over the berries, pour the glaze. Keep the pie in the fridge for an hour or so until the glaze has set.

Step 8: Slice the pie and serve with a dollop of whipped cream. Enjoy!
