This is one of my favourite summer chicken meals. No need to stand in front of the fire to make this perfectly flavoured, tender steamed chicken with black bean sauce. This is excellent to serve with steamed rice for a simple meal ready in fifteen minutes! This is no doubt incredibly delicious and very aromatic. A must and for keeps! Before cooking, you should remember that the key to success is marinating the chicken for great flavour. So make sure not to skip it!

4 chicken drumsticks, remove the bones and cut into small pieces
Marinating Ingredients:
1/4 teaspoon sugar
1 tablespoon light soy sauce
1 tablespoon Chinese cooking wine
1/4 teaspoon white pepper powder
5 slices of ginger
2 spring onions
1/2 tablespoon oyster sauce, optional
Others:
4 garlic cloves, finely chopped
1 tablespoon cornstarch
1 tablespoon fermented black beans
wood ear mushrooms as needed
other mushrooms
2 tablespoons vegetable cooking oil, heat until smoky
How to make Steamed Chicken with Black Bean Sauce
Step 1: Into small pieces, cut the chicken meat. Combine the marinating ingredients (light soy sauce, sugar, white pepper, oyster sauce, Chinese cooking oil, spring onion, and ginger slices) until well incorporated. Add the chicken. Toss and marinate for at least 30 minutes.
Step 2: After marinating the chicken, discard the spring onion sections and slices of ginger. To the marinade, add the cornstarch and mix well.
Step 3: At the bottom, add the mushrooms. Place the chicken on top and evenly spread over the finely chopped garlic and roughly cut fermented black beans.
Step 4: In the meantime, heat about 2 tbsp cooking oil on the stovetop until smoky. Evenly pour this over the garlic and mix well. Let everything steam for about 15 minutes with high fire.
Step 5: Before serving, sprinkle the steamed chicken with more extra light soy sauce and sesame oil. This will make a few naughty flavours. Enjoy this with steamed rice.
