2 tbsp of olive oil
2 lbs flank steak
1 lb shrimp peeled and deveined
tortillas warmed
1 1/2 tsp of garlic powder
1 1/2 tbsp of chili powder
1 1/2 tsp of onion powder
1 1/2 tsp of smoked paprika
1/2 tbsp of soy sauce
1 yellow bell pepper
1 orange bell pepper
1 small red onion
1 red bell pepper
1 tsp of ground cumin
1 tbsp of freshly squeezed lime juice
2 1/2 tsp kosher salt
1 tsp ground black pepper
fresh cilantro for garnish
limes for garnish
How to make Steak and Shrimp Sheet Pan Fajitas
Step 1: Prepare the oven. Preheat it to 450 degrees.
Step 2: Mix the salt, pepper, chilli powder, garlic powder, onion powder, cumin, and paprika in a small bowl.
Step 3: Combine 1 tbsp olive oil with lime juice, soy sauce, and 2/3 of spice mixture in a large plastic storage baggie. Add the steak and coat. Marinate the steak at room temperature.
Step 4: Place the shrimp in a small bowl. Add half tbsp olive oil and the rest of the 1/3 spice mixture. Toss and set aside. Now, slice the peppers and onions into 1/4-inch pieces. To the sheet pan, add the peppers and onions and drizzle with half tbsp olive oil. Sprinkle with half tsp kosher salt and 1/4 tsp freshly ground black pepper. Toss well. To the outer edges of the sheet pan, move the bell peppers and onions, then put the steak in the centre.
Step 5: Place in the preheated oven and bake for about 12 to 15 minutes. Take the flank steak from the oven. Over the onions and peppers, arrange the uncooked shrimps. Broil for about 3 to 4 minutes on high until the shrimp is just cooked through. The steak is done once the internal temperature reached 140 degrees for medium-rare and 150 degrees for medium. Allow the rest to rest for at least 10 minutes before slicing against the grain for a juicy and tender steak. Before serving, sprinkle with some fresh cilantro and a squeeze of fresh lemon juice.
Step 6: Wrap the tortillas in a foil packet and heat them in the oven. Serve the fajitas in warm tortillas. Enjoy with avocado and/or sour cream.
