Spinach Stuffed Pork Chops

I always love simple meals but still got a whole lot of flavour. These low-carb stuffed pork chops with cream cheese and spinach filling are not only easy to make but a guaranteed hit always!

Ingredients

4 thick-cut boneless pork chops, about 6-oz. each

1 tbsp olive oil or avocado oil

1 tsp paprika

1 tsp salt, divided

¼ tsp garlic powder

¼ tsp onion powder

4 oz. cream cheese softened

¼ c. grated Parmesan

2 tbsp mayonnaise

1 ½ c. chopped fresh spinach

1 tsp garlic, minced

½ tsp red pepper flakes

How to make Spinach Stuffed Pork Chops

Step 1: Prepare the oven. Preheat it to 375 degrees.

Step 2: On a cutting board, lay the pork chops and slice a pocket using a sharp knife into each side.

Step 3: With avocado oil, drizzle the pork chops.

Step 4: In a small bowl, combine the paprika, half a tsp salt, garlic powder, and onion powder. Sprinkle this on both sides of the pork chops.

Step 5: Into a small mixing bowl, add the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper, and the rest of the half tsp salt. Mix well.

Step 6: Into the pork chops, evenly spoon the spinach mixture.

Step 7: In a 9 x 13-inch baking dish, place the pork chops. Shift on the preheated oven and bake for about 25 minutes, uncovered until the pork is cooked and the internal temperature reached 145 degrees.

Step 8: Remove from the oven and let the pork chops rest for at least 3 minutes.

Step 9: Serve and enjoy!
