Spinach Stuffed Pork Chops

I love simple, straightforward meals, and those with just several ingredients that beautifully combined to make a luscious, packed flavour dish. Tender, juicy pork chops stuffed with delightful cream cheese and spinach filling. A real break striker!

Ingredients

4 thick-cut boneless pork chops, about 6 oz each

1 tbsp olive oil or avocado oil

1 tsp paprika

1 tsp salt, divided

¼ tsp garlic powder

¼ tsp onion powder

4 oz cream cheese, softened

¼ c. grated Parmesan

2 tbsp mayonnaise

1 ½ c. chopped fresh spinach

1 tsp garlic, minced

½ tsp red pepper flakes

How to make Spinach Stuffed Pork Chops

Step 1: Prepare the oven. Preheat it to 375 degrees.

Step 2: On a cutting board, place the pork chops and slice a pocket with a sharp knife on both sides of the chops.

Step 3: With avocado oil, drizzle the pork chops.

Step 4: In a small bowl, combine the paprika, half a tsp salt, garlic powder, and onion powder. Evenly sprinkle the entire pork chops with this.

Step 5: In a small mixing bowl, add the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper, and the rest of the half tsp salt. Stir well to mix.

Step 6: Into each pork chop, evenly spoon the spinach mixture.

Step 7: In a 9 x 13-inch baking dish, place the pork chops. Place inside the preheated oven and bake for about 25 minutes until the chops are cooked and the internal temperature reads 145 degrees.

Step 8: Remove from the oven and allow the pork chops to rest for at least 3 minutes.

Step 9: Serve and enjoy!
