Spinach Stuffed Chicken Breasts

I am expecting guests this weekend, and I am excited to serve my favourite Spinach Stuffed Chicken Breasts. Always a huge hit and never fail to impress everyone! This dish is incredibly easy to throw together using simple ingredients and is ready in under thirty minutes. Such a real treat for busy days!

Enjoy lush chicken breasts stuffed with cream cheese, fresh spinach, and Parmesan cheese. A great low-carb, keto-friendly, and high in fat with slight protein. And the spinach is an awesome way to get some potassium in. These spinach stuffed chicken breasts are truly a gem! Pair this with a simple side salad for an easy and quick meal perfect for a simple weeknight meal or entertaining!

Ingredients

1 tbsp olive oil or avocado oil

4 chicken breasts

1 tsp paprika

¼ c. grated Parmesan

¼ tsp garlic powder

4 oz. cream cheese – softened

¼ tsp onion powder

2 tbsp mayonnaise

½ tsp red pepper flakes

1 tsp garlic, minced

1 tsp salt, divided

1 ½ c. chopped fresh spinach

How to make Spinach Stuffed Chicken Breasts

Step 1: Prepare the oven. Preheat it to 375 degrees.

Step 2: On a cutting board, place the chicken breasts and drizzle with oil.

Step 3: To a small bowl, add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder. Mix well until blended, then evenly sprinkle this on both sides of the chicken.

Step 4: Into the side of each chicken breast, cut a pocket using a sharp knife. Set aside.

Step 5: To a small mixing bowl, whisk the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper, and the rest of the half tsp of salt until well mixed.

Step 6: Into each chicken, evenly spoon the spinach mixture.

Step 7: In a 9 x 13-inch baking dish, place the chicken breasts. Bake in the preheated oven and bake for about 25 to 30 minutes, uncovered, or until the chicken is completely cooked.
