Spinach Feta Pinwheels

Prep time: 30 mins | Cook time: 15 mins | Total time: 45 mins | Yield: 16 PINWHEELS

These delicious pinwheels are the most beautiful things I’ve seen! Flaky, buttery puff pastry filled with spinach, feta, and mozzarella. If you love the traditional spanakopita, I am very sure that you’ll also enjoy these Spinach Feta Pinwheels. This recipe puts a fun and exciting twist to the classic spanakopita and transformed it into a modern classic! To make these pinwheels, you only need a couple of ingredients. Do not be intimidated because they are super easy and a snap to whip up!

Ingredients

1/2 c. crumbled feta (buy a block and crumble it yourself

1 green onion, chopped

1/4 c. grated mozzarella

1/2 tsp garlic salt

A few grates of fresh nutmeg

1 egg whisked with 1 tbsp of water

1 puff pastry sheet, defrosted

1 10-oz. package of frozen chopped spinach, defrosted and squeezed dry

How to make Spinach Feta Pinwheels

Step 1: Combine the egg and water until well mixed. Set aside.

Step 2: Whisk the cheeses, onion, and seasonings. Set aside.

Step 3: On a lightly floured surface, roll the puff pastry out and flatten the seams. With the egg wash, brush the surface of the pastry.

Step 4: With the cheese mixture, top the surface of the pastry. Break the spinach apart and evenly spread it on the surface. Make sure to leave about 1-inch free of toppings on one short side.

Step 5: Roll the pastry up beginning on the short side that is covered with filling. Roll it like you are rolling a jellyroll.

Step 6: Using parchment, line two baking sheets. Into 1/2 to 3/4 slices, cut the roll and transfer on the prepared sheets.

Step 7: Place in the fridge or freezer to cool the pinwheels while preheating the oven to 400 degrees.

Step 8: When ready to bake, place the pinwheels in the preheated oven and bake for about 15 minutes or until golden.
