This spinach and mozzarella egg bake are so delicious, that even my pickiest eaters can’t resist it! Packed with spinach, mozzarella, and green onion. The eggs are keeping everything together. 12 Eggs, beaten
2 teaspoons olive oil
1/2 c. thinly sliced green onions
2 c. grated mozzarella cheese
12 ounces organic fresh spinach
fresh ground black pepper to taste
2 teaspoons Spike seasoning (or use any all-purpose seasoning mix that pairs well with eggs)
HOW TO MAKE SPINACH AND MOZZARELLA EGG BAKE
Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C.
Step 2: Using olive oil or nonstick spray, grease a 9 x 13-inches glass or crockery casserole dish.
Step 3: In a large frying pan, heat the oil. Once the oil is hot, add the spinach, stir, and cook for about 2 minutes or until just wilted. To the casserole dish, transfer the spinach. Spread the spinach around to cover the bottom of the casserole dish.
Step 4: On top of the spinach, layer the grated cheese and sliced onions. Then, sprinkle with Spike Seasoning and fresh ground pepper.
Step 5: Whisk the eggs until well mixed, then pour it over the spinach/cheese. Gently stir using a fork to evenly combine the eggs, spinach, and cheese.
Step 6: Place in the preheated oven and bake for about 25 to 30 minutes or until set and light brown. Remove from the oven when done and allow the egg to bake to cool for about 5 minutes.
Step 7: Slice the egg bake into individual slices. Keep in the fridge for a quick meal. Make sure to reheat in the microwave for no longer than 2 minutes. Serve a slice with sour cream or sprinkle a bit of Green Tabasco Sauce sprinkled on top if desired.
