Spicy, Sweet and Sticky Chicken Thighs

A one-skillet meal that is super easy and quick to make. The combination of spicy and sweet is addicting! These sticky, tender chicken thighs are rubbed with a homemade spice rub and brushed with an incredibly sweet honey sauce that you can never say no to!

Ingredients

SPICE RUB:

2 tsp, or to taste, chilli powder

1 tsp or to taste, paprika

1 tsp ground cumin

2 tsp garlic powder

1/2 tsp salt

1/8 tsp ground black pepper

HONEY SAUCE:

1/3 c honey

1 tbsp apple cider vinegar

CHICKEN:

1 tbsp unrefined, cold-pressed coconut oil

6 to 8 boneless, skinless chicken thighs

green onions, for garnish

How to make Spicy, Sweet, and Sticky Chicken Thighs

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: In a cast-iron skillet, melt the coconut oil over medium-high heat.

Step 3: Mix the spice rub ingredients; chilli powder, paprika, ground cumin, garlic powder, salt, and ground black pepper.

Step 4: With the prepared spice rub, coat the chicken evenly.

Step 5: Add and cook the chicken to the skillet with melted coconut oil for about 5 minutes on both sides or until browned.

Step 6: To make the honey sauce, whisk the honey with apple cider vinegar until well mixed.

Step 7: Take the pan out of the heat and add the honey sauce to the pan. Turn to evenly coat the chicken.

Step 8: Place inside the preheated oven and bake for about 25 to 30 minutes or until the chicken is fully cooked.

Step 9: Once done, remove the chicken from the oven and allow to cool for a few minutes.

Step 10: Transfer to a plate and garnish the chicken with green onions. Enjoy!
