Spanakorizo – Greek Spinach Rice

A filling vegetarian meal and a tasty side dish. this simple and authentic Spanakorizo (Greek Spinach Rice) takes only five minutes to prep and in under an hour, you’ll have this delicious dish on your dinner table. With an exceptional flavour and aroma thanks to fresh dill, chives, and lemon juice, no one can ever resist this amazing dish.

INGREDIENTS

3 tablespoons olive oil

1 medium onion chopped

4 garlic cloves chopped

4 tablespoons chives or scallions chopped and divided

4 tablespoons dill chopped and divided

1/2 pound baby spinach

1 c. basmati rice

2 c. vegetable broth can substitute with water

3 tablespoons butter

2 tablespoons lemon juice

1/2 tablespoon lemon zest

feta cheese to garnish

How to make Spanakorizo – Greek Spinach Rice

Step 1: In a large pot, heat olive oil over medium-high heat. Once the oil is hot, add the onions. Saute for approximately 5 to 7 minutes until translucent. Add in the garlic, 2 tbsp dill, and 2 tbsp chives, sand saute for a minute or two more.

Step 2: Add the spinach and cook until just it wilts down. This takes around 3 to 4 minutes.

Step 3: Stir in the salt, pepper, basmati rice, and vegetable broth. Cover and bring this to a boil. Adjust the heat to medium-low and simmer for about 20 minutes.

Step 4: Add in the butter, lemon juice, and zest, and the rest of the dill and chives. Stir well.

Step 5: Before serving, garnish with feta cheese and lemon wedges. Enjoy!

Note:

For this recipe, you can use fresh or frozen spinach.
