Southern Peach Cobbler

Summer is almost over, but my love for this delicious Southern Peach Cobbler will stay forever! My fave dessert with fresh sweet peaches baked with a crispy cobbler topping. The perfect summer dessert that you’ll enjoy all year round! To serve, scoop a big serving of vanilla ice cream or frozen banana ice cream on top.

INGREDIENTS

8 fresh peaches – peeled, pitted, and sliced into thin wedges

1/4 c. granulated sugar

1/4 c. light brown sugar

1/4 tsp ground cinnamon

1/8 tsp ground nutmeg

1 tsp fresh lemon juice

2 tsp cornstarch

Cobbler Topping:

2 c. all-purpose flour

1/2 c. granulated sugar

1/2 c. light brown sugar

2 tsp baking powder

1 tsp salt

12 tbsp unsalted butter, chilled and cut into small pieces

1/2 c. boiling water

For sprinkling:

3 tablespoons granulated sugar

How to make Southern Peach Cobbler

Step 1: Prepare the oven. Preheat it to 400 degrees F if using a dark or glass pan and 425 degrees F for a light-coloured pan.

Step 2: Evenly mix the peaches with 1/4 cup granulated sugar, 1/4 cup light brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl. Into a 2-quart baking dish, pour the mixture. Place in the preheated oven and bake for about 10 minutes.

Step 3: In the meantime, combine the flour, sugars, baking powder, and salt to make the cobbler topping. Add the butter and mix using your fingertips, or a pastry blender until the mixture resembles a coarse meal. Add the water and stir until just combined.

Step 4: When done, take the peaches out of the oven. Over the peaches, drop spoonfuls of the topping and sprinkle with sugar.

Step 5: On a baking sheet, set the baking dish and return to the oven. Bake for another 30 minutes until golden.

Step 6: To serve, top the cobbler with ice cream if desired. Enjoy!
