SOUR CREAM ENCHILADAS

PREP TIME: 5 MINS | COOK TIME: 50 MINS | TOTAL TIME: 55 MINS | YIELD: 4

This is the best dish I’ve made this week! Rich, creamy, and incredibly delicious Sour Cream Enchiladas. Easy to make using only a few ingredients. If you love simple recipes and enjoy Mexican food, I am pretty sure that you’ll love this.

Enchiladas are amazing but are sometimes tedious to put together. That’s why I love enchilada casserole. Same goodness, less the hassle not to mention it’s filling, super-rich, and everyone loves it! Feel free to make this using either corn or flour tortillas. But if you want a more authentic enchilada, I suggest going with corn tortillas.

INGREDIENTS

1 large chicken breast

1 tablespoon taco seasoning

1/4 onion, diced

1 1/2 c. sour cream

1 1/2 c. Cheddar Cheese

8 small tortillas

2 (10 ounces) cans of enchilada sauce

HOW TO MAKE SOUR CREAM ENCHILADAS

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Sprinkle the chicken breast with taco seasoning. Place in the preheated oven and bake for about 25 to 30 minutes until the chicken is cooked through. When done, take the chicken breasts from the oven and shred them.

Step 3: In a bowl, combine the chicken, onion, sour cream, and a cup of cheese.

Step 4: With the chicken mixture, fill the tortillas and roll them up. Into the bottom of a 13 x 9-inch baking dish, spread a little amount of enchilada sauce, then place the tortillas on the top seam side down. Over the tortillas, pour the remaining enchilada sauce. Tent with foil and bake in the preheated oven for approximately 35 minutes until bubbly and warm.

Step 5: Remove the cover and sprinkle the rest of the cheese on top. Continue to bake for another 5 minutes until the cheese has melted. When done, take the enchiladas out of the oven and let them cool for at least 5 minutes before serving.
