Ingredients
2 tablespoons olive oil
2 tablespoons butter
4 chicken thighs (or your preferred parts)
2 tablespoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon chopped Italian parsley
1/2 c. of flour
1 c. chicken broth
1/2 c. milk
1 bell pepper (sliced)
1 onion (sliced)
HOW TO MAKE SMOTHERED CHICKEN AND HOMEMADE GRAVY
Step 1: With the spices, season the chicken and toss in 1/3 flour.
Step 2: In a pan, heat the oil. Add the chicken once the oil is hot and sear both sides for about 4 minutes until brown. When done, set the chicken aside.
Step 3: In the same pan, add the veggies and cook until tender, stirring often. Now, add the butter and let it melt. Once the butter has melted, stir in the rest of the flour for approximately 2 minutes or until it begins to brown.
Step 4: Pour in the broth and milk. Stir well until incorporated and the mixture begins to thicken.
Step 5: To the pan, add the chicken back. Put the lid on and continue to cook for another 20 to 25 minutes or until the chicken is cooked.
Step 6: Remove from the heat when done and serve the chicken right away over rice or potatoes. Enjoy!
