The best Smoked Sausage and Black-Eyed Peas! I rate this 5 out of 5. I made this five times already in just ten days and my family can’t get enough of this! Make sure to double the recipe if you have friends or guests coming over because this is super good it’ll sure be gone in a blink! Serve this with any bread of your choice.

This is great comfort food. Always delivers and never disappoint. When I first served this, everyone asked me to make this the next day. Super delicious you are guaranteed no leftover! This sure is a must-try and a keeper!

Ingredients

12 – 16 oz smoked sausage

1 c chopped yellow onion

½ tsp salt

¼ tsp cayenne

4 whole cloves garlic, peeled

5 sprigs of fresh thyme

4 bay leaves

3 tsp finely chopped Italian parsley

8 c chicken stock

1 lb dried black-eyed peas, rinsed and drained

1 tbsp minced garlic

Minced green onions, to garnish (optional)

How to make Smoked Sausage and Black-Eyed Peas

Step 1: Cook the sliced sausage in a large pot over medium heat.

Step 2: Add the onions to the pan followed by salt, cayenne, whole garlic cloves, bay leaves, thyme, and parsley.

Step 3: Continue to cook for approximately 5 minutes, occasionally stirring until the onions start to soften.

Step 4: Pour in the chicken stock and add in the black-eyed peas, and minced garlic.

Step 5: Bring the mixture to a boil. Cover and simmer for about 1 1/2 hours or until the peas are tender.

Step 6: Before serving, garnish with green onions if desired. Enjoy!
