Smoked Gouda Muffin Tin Potato Stacks

Prep Time: 10 mins | Cook Time: 35 mins | Servings: 4

A lovely appetizer and tasty side dish that will impress everyone at the dinner table. Buttery, cheesy potatoes sliced thinly and baked until crispy with golden edges and soft, tender inside.

Ingredients

1 lb potatoes small Yukons (or use narrow russets)

1 1/2 tbsp butter

1 tbsp olive oil

1/2 tbsp fresh thyme leaves finely minced, stems removed

1/2 tsp salt

1/4 tsp black pepper

1/2 c. Gouda cheese grated

Cooking spray

How to make Smoked Gouda Muffin Tin Potato Stacks

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: In a medium-sized bowl, place the butter, olive oil, thyme, salt, and pepper. Place in the microwave for at least 30 seconds until the butter has just melted, then stir.

Step 3: Peel the potatoes and slices them thinly. Add to the bowl with the butter mixture and gently toss to coat.

Step 4: Using cooking spray, lightly grease a standard muffin pan.

Step 5: Stack the potatoes into the cups of the prepared muffin pan. Add in a bit of cheese between the layers, then top with a stack of potato. Press the layer down gently with your fingers or a back of a teaspoon.

Step 6: To the top of each stack, sprinkle a little salt and fresh cracked black pepper. Place inside the preheated oven. Bake for about 30 to 45 minutes until the potatoes are tender and golden with crispy brown edges.

Step 7: When done, remove from the oven and allow the potato stacks to sit for at least 2 to 3 minutes in the tins.

Step 8: Gently take the potatoes out of the tin and onto a plate. If desired, garnish with thyme leaves and enjoy immediately.
