The balance of exciting flavours from the standard Thai style curry with a base of coconut milk with spicy chillies, sweet coconut sugar, salty fish sauce, and sour lime juice is magical! And the fresh basil added at the end, tons of it, makes this curry stand out. This Thai Basil Chicken Curry is super perfect to serve over cauliflower rice or naan.
Prep this in only five minutes and let your trusty slow cooker do all the work. Once ready, simply shred the chicken and mix in the cilantro and basil and your work is done!

1 lb boneless and skinless chicken (breasts or thighs)
1 (13.5 oz) can coconut milk
1 tbsp curry powder
1 tbsp fish sauce (or soy sauce)
1 tbsp lime juice (or rice vinegar)
1 tbsp coconut/palm sugar (or brown sugar)
1 onion, diced
1 jalapeno, diced (or birds eye chilli)
4 cloves garlic, chopped
1 tbsp ginger, grated
1/4 c. cilantro, chopped
1/3 c. basil, chopped
How to make Slow Cooker Thai Basil Chicken Curry
Step 1: Into the slow cooker, add the chicken, coconut milk, curry powder, fish sauce, lime juice, sugar, onion, jalapeno, garlic, and ginger.
Step 2: Set on low and cook for 8 hours. Or 3 hours on high.
Step 3: Shred the chicken, then mix in the cilantro and basil.
