Because of my busy schedule, I always plan my family’s meals. I keep a week’s worth of meals in the fridge for an easy and quick meal. This slow cooker shredded chicken has been one of my favourites and go-to because this takes less effort to make, and I just have to dump everything in my slow cooker and leave. After I shred the chicken I use some right away and keep the rest in an airtight container. This shredded chicken is perfect for any Mexican dishes, salads, and more!
This slow cooker shredded chicken is a very versatile dish. I can use them in pretty much anything. For this recipe, I have used Mexican spices, but you can use pretty much any spices you have on hand. You can easily double the spices and just keep the rest in an airtight container to use later.

INGREDIENTS
1 tablespoon dark chilli powder
1 ½ pound of boneless skinless chicken breast
½ teaspoon kosher salt
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon Fresh ground black pepper
1 c. of low sodium chicken broth
HOW TO MAKE SLOW COOKER SHREDDED CHICKEN
Step 1: In a small bowl, whisk all the spices until well blended.
Step 2: To your slow cooker, pour in the chicken broth and add the chicken breasts. Over the chicken, pour half of the seasoning. Flip the chicken and add the remaining seasoning on top. Close the lid and seal, then set to cook for 8 hours on low setting or 4 hours on high.
Step 3: When done, take the chicken from the slow cooker using tongs and transfer it to a cutting board. Shred the chicken breasts using two forks. Return the shredded chicken to the pot and stir well.
Step 4: Use the shredded chicken right away or keep it in an airtight container if meal planning.
