INGREDIENTS
1 Smithfield Prime Pork Tenderloin (about 1.5 lbs)
2 tsp kosher salt
1 tsp dried rosemary
1 tsp celery seed
1/2 tsp ground black pepper
1–3 cloves garlic, minced
1 tbsp olive oil
1 small to medium onion cut into 4 large slices
3 tbsp soy sauce
2 tbsp Worcestershire sauce
2 to 2.5 lbs of potatoes, scrubbed and cut into 1 to 1.5” cubes
3 tbsp butter, divided
1 tbsp chopped parsley
additional salt and pepper to taste
How to make Slow Cooker Pork Tenderloin and Potatoes
Step 1: Take one tenderloin from the package of pork and place it on a large plate.
Step 2: In a small bowl, combine the salt, rosemary, celery seed, black pepper, and minced garlic.
Step 3: Rub the entire pork with olive oil, then coat both sides well with the spice mixture.
Step 4: On the bottom of a slow cooker, place the sliced onion and the pork on top. Drizzle the pork with soy sauce and Worcestershire sauce.
Step 5: Make a pocket for the potatoes using a large piece of foil. Place it next to the pork. With cubed potatoes, fill the foil and add a tbsp of butter on top. Make sure you place the pork off to one side of the slow cooker but not touching the side completely.
Step 6: Put the lid on and set to cook on low for 3 1/2 to 4 hours until the internal temperature of the pork reached 145 degrees.
Step 7: Remove the pork from the slow cooker when done and let it rest for at least 3 minutes.
Step 8: Meanwhile, in a large bowl, place the potatoes. Toss with the rest of the 2 tbsp butter, chopped parsley, and salt.
Step 9: After 3 minutes of resting, slice the pork and place it on a serving platter. Enjoy immediately with the buttered potatoes along the side.
NOTES:
For even cooking, make sure the potatoes have the same sizes. Ideally, the size of the potatoes should be around 1 to 1 1/2 inch cubes.
For this recipe, you can use whatever fresh herbs you like or what’s available. Fresh dill and chives work great, too!
You can strain the juice left in the bottom of the slow cooker and serve it as a delicious “au jus”. You can also add it to the saucepan. Allow to simmer, then add the slurry (mixture of 3 tbsp cold water and a tbsp corn starch), stirring until thickened.
