1 tbsp pork rub seasoning, or to taste
¼ tsp Chinese five-spice powder
1 (3 lb) pork loin roast
2 medium sweet potatoes, peeled and cut into bite-size pieces
½ c. brown sugar
3 tbsp butter
salt and ground black pepper to taste
How to make Slow Cooker Pork Loin Roast with Brown Sugar and Sweet Potatoes
Step 1:In a small bowl, mix the pork rub seasoning and Chinese five-spice powder. Coat this on the entire pork roast.
Step 2: Into the bottom of a slow cooker, add the sweet potatoes. Sprinkle over the brown sugar, then butter. On top, place the roast and season with salt and pepper.
Step 3: Set the slow cooker on low and cook the roast for 6 to 7 hours until fork-tender. You’ll know it’s done when the instant-read thermometer inserted into the centre reached 145 degrees F or 63 degrees C.
Notes:
Make sure to not add water to the slow cooker.
You can set the slow cooker on high and continue to cook the roast for another 45 minutes if the pork does not seem done after 7 hours.
