I have never seen pork stuffed with apples before. The reason I was so intrigued when I read about this recipe. So I immediately tried this and as expected my family loved it! Beautiful and juicy, tender pork loin with apples tucked into the slits cooked slowly with onions, butter, honey, and a touch of cinnamon. The result is a melt-in-your-mouth, freaking impressive, flavorful pork! Serve this over rice pilaf for a satisfying meal perfect for any special occasion!

4 pounds pork loin I use a centre cut
2 granny smith apples were sliced and divided
1 white onion sliced
1/2 c. butter sliced
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cinnamon
1/4 c. honey
1/2 teaspoon dried thyme or a few sprigs of fresh
How to make Slow Cooker Honey Apple Pork Loin
Step 1: On top of the pork loin, cut about an inch slit. Into the slits, plus in the slices of apple, and set aside.
Step 2: In the slow cooker, add the onions and the rest of the apple slices. On top, lay the butter slices and add the pork loin over, then sprinkle with salt, pepper, and cinnamon. Add the thyme and drizzle with honey.
Step 3: Put the lid on and set to cook for 6 hours on low, undisturbed.
Step 4: When done, take the lid off and transfer the pork on a platter to rest for at least 5 minutes. After the resting time, slice and serve. Enjoy!
