1 1/2 lbs boneless chicken breast
3 medium carrots peeled and diced
3 stalks celery diced
1 medium onion diced
3 cloves garlic minced
6 c. low sodium chicken broth
1 c. water
2 bay leaves
1 tsp Italian seasoning or more to taste
2 c. cheese tortellini
chopped fresh parsley for serving if desired
salt and pepper to taste
HOW TO MAKE SLOW COOKER CHICKEN TORTELLINI SOUP
Step 1: In a slow cooker, add all the ingredients (chicken breast, carrots, celery, onion, garlic, low-sodium chicken broth, water, bay leaves, and Italian seasoning) except for the tortellini.
Step 2: Set on low and cook for 6 hours.
Step 3: Take the chicken out of the slow cooker, shred or cube, then put it back to the slow cooker.
Step 4: Now, add the tortellini to the slow cooker and continue to cook for 15 minutes more.
Step 5: To taste, season with salt and pepper, then discard the bay leaves.
Step 6: If desired, garnish with chopped parsley and enjoy immediately.
